Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 2½ cups dried mung beans, rinsed
  • 1 tsp Vegitude Power Spice Blend 
  • 2 stalks celery, chopped
  • 2 cups green beans, chopped 
  • 1 medium carrot, chopped
  • 4 cups thinly sliced green cabbage
  • 2 medium tomatoes, chopped
  • 12 cups vegetable broth 
  • Sea salt and freshly ground black pepper

Steps

  1. Heat the oil in a large pot over medium heat. Add the onion and saute until softened, about 3 to 5 minutes. Then add the mung beans and saute for an additional 2 minutes. 
  2. Add Vegitude Power Spice Blend, celery, green beans, and carrot. Saute for 3 to 5 minutes. Add in the vegetable broth, bring to a boil, and allow to simmer for 30 minutes. 
  3. Stir in the cabbage and tomatoes, then simmer for an additional 5-10 minutes. The cabbage should remain crunchy. 
  4. Season with salt and pepper to taste.
