Ingredients
- 1 tbsp Extra Virgin Olive Oil
- 2 Italian Eggplant (cubed)
- 15 Mushrooms (chopped)
- 2 Bell Peppers (cubed, red and yellow)
- 1 1/2 tsps Vegitude Power Blend
- 2 cups Vegetable Broth
- 1 cup Quinoa (uncooked)
- 1/2 tsp Sea Salt (plus pinch of pepper)
Directions
1. Preheat oven to 400°F. Line a sheet pan with parchment paper.
2. In a mixing bowl, toss all vegetables with oil and spice blend. Transfer to sheet pan.
3. Bake 30 minutes, flipping at least twice, until veggies are golden brown.
4. Remove from oven and transfer into a lightly sprayed 9 x 12-inch baking dish.
5. Add the quinoa, broth and some sea salt and pepper to the prepared baking dish and stir
to mix all the ingredients. Ensure the vegetables and quinoa are evenly dispersed.
6. Bake 60 minutes, until the center is firm. Let cool for at least 5 minutes before slicing to
serve. Store covered and refrigerated.
