INGREDIENTS
- Avocado oil spray
- 6 cups diced apples
- 1 1/2 tablespoons arrowroot powder
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 3 tablespoons pure maple syrup, divided
- 1 cup rolled oats (sprouted preferred)
- 1/4 cup ground flax seed
- 1/4 cup chia seeds
- 1/4 cup almond flour
- 1 teaspoon Morning Boost or Cinnapeel Spicer Spice Blend*
- 2 tablespoons avocado or walnut oil
DIRECTIONS
Preheat oven to 350°F. Lightly spray a pie plate or 9-inch baking dish with avocado oil spray.
In a mixing bowl, toss the blueberries in arrowroot powder, lemon juice, vanilla extract, and 1/2 of the maple syrup. Transfer to the prepared pie plate.
In a separate mixing bowl, toss the oats, flax seed, chia seeds, almond flour, and spice blend.
Whisk the 2 tablespoons of oil with the remaining maple syrup and fold into the oat mixture until oats are evenly coated. Spoon over the fruit in the pie plate. Cover with parchment paper and foil.
Bake 45–60 minutes, until the fruit is bubbly hot and oat topping is golden brown. Let cool 10 minutes before serving.
*Substitute spice blend with ¾ teaspoon Ceylon cinnamon, ½ teaspoon orange peel, pinch of ground ginger.
