Chocolate Chip Cookies

Ingredients

1 1/2 cups almond flour

1 1/2 teaspoons baking powder

3 tablespoons avocado or walnut oil

3 tablespoons pure maple syrup

2 tablespoons unsweetened plant milk

1 teaspoon vanilla extract

1/3 cup dark chocolate chips

My nutritious take on a classic treat, these chocolate chip cookies are sweetened with a touch of 100% pure maple syrup. The almond flour contains cancer protective nutrients and adds heart-healthy fats and a bit of protein to leave you feeling satisfied.

Directions

  1. Preheat oven to 350°F. Line a sheet pan with parchment paper.
  2. In a mixing bowl, stir together almond flour and baking powder.
  3. Stir in the oil, maple syrup, plant milk, and vanilla extract, until a dough has formed. Fold in chocolate chips.
  4. Drop heaping tablespoons of the dough onto the parchment paper-lined sheet pan. Cover with another piece of parchment paper and use your hand to flatten each into a cookie shape. Discard top sheet of parchment.
  5. Bake 15-20  minutes for soft cookies, or 20–25 minutes for crunchier cookies. Let cool 5 minutes before serving.
