Effortless Oat Cups

Ingredients

Avocado oil spray

2 bananas, peeled

2 cups rolled oats (sprouted preferred)

1/4 cup chia or basil seeds

1 tablespoon honey, date, or pure maple syrup

1 1/2 teaspoons vanilla extract

1 teaspoon Golden Breakfast Power Spice Blend

Dollops of plant-based yogurt or nut butter, to top cups

Fresh berries, optional, for garnish

The oats in these fiber powerhouses are a great source of beta-glucans, a special type of soluble fiber that helps support a healthy immune system. Directions

  1. Spray 12 cups of a muffin tin with avocado oil spray.
  2. In a mixing bowl, use the back of a fork to mash the bananas. Fold in oats, chia seeds, honey, vanilla extract, and spice blend, until all is combined.
  3. Divide the mixture between the 12 cups of the muffin tin and press it up the sides of the muffin cups to create little cups.
  4. Preheat oven to 350°F. Bake the oat cups for 15 minutes.
  5. Let cool 10 minutes before removing the oat cups from the muffin tin. Fill each with a dollop of your choice of plant-based yogurt, jam, or nut butter.

Garnish with fresh berries, if desired
