Green Garden Minestrone

Ingredients

1 tablespoon extra-virgin olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 medium yellow squash, chopped

2 medium zucchini, chopped

1 medium carrot, chopped

3 large tomatoes, chopped

8 cups low-sodium vegetable broth

1 teaspoon Pure Italian Power Blend 

3 cups cooked kidney beans, no salt added

2 cups baby spinach

2 cups chopped kale

Salt and freshly ground black pepper

Things get a whole lot healthier when you invite chopped squash and fresh leafy greens to your minestrone bowl. Everything about this soup shouts SPRING! And with its abundance of fiber and antioxidant-rich kidney beans along with an extra boost of veg, this soup will give your party a delicious nutritional edge.

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion and sauté 3 to 5 minutes, until softened. Add the garlic and cook 1 more minute.
  2. Stir in the squash, zucchini, and carrot and sauté for 5 minutes.
  3. Add the tomatoes, spice blend and broth and bring to a boil. Reduce the heat and simmer, covered, for 20 minutes.
  4. Add the beans, spinach, and kale and simmer for another 10 minutes, stirring occasionally.
  5. Season with salt and pepper to taste and serve.
