Green Pea Fritters

Ingredients

2 teaspoons extra virgin olive oil 

1 yellow onion, diced

3 cloves garlic, minced

2 cups frozen peas

¾ cup almond flour

1 teaspoon baking soda

Get ready to ‘pea-lease’ your taste buds with my savory Green Pea Fritters.  They make a great protein-packed snack that’s fiber-rich and budget friendly. Many people looking for variety in their plant-based proteins often overlook the humble pea, which is rich in plant compounds that may have anti-cancer effects. ‘Peas’ be sure you don’t count these out!

Directions

  1. Preheat oven to 350°F. Line a sheet pan with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add the onion and garlic to the skillet and sauté 5 minutes.
  3. Meanwhile, run the frozen peas under warm water to thaw. Transfer to a food processor.
  4. Add the cooked onion and garlic to the peas in the food processor and process until a thick paste has formed.
  5. Transfer the pea mixture to a mixing bowl and stir in almond flour, baking soda, spice blend, and salt. Wet your hands and form the mixture into patties. Transfer to the lined sheet pan.
  6. Bake 15-20 minutes, flipping fritters halfway through, until lightly browned.
