Mediterranean Chopped Salad

Ingredients

4 Persian cucumbers, diced

4 ripe Roma tomatoes, diced

½ cup fresh parsley, chopped

½ teaspoon Super Sumac Power Blend 

1 ½ tablespoons extra-virgin olive oil

1 ½ tablespoons fresh lemon juice (about 1 small lemon)

Sea salt to taste

Sharing a spread of a freshly diced cucumber and tomato herb salad, ginormous bowl of hummus topped with spices, spiced olives, eggs (and SO much more) has made for some wonderful memories--plus it’s a balanced meal that fuels us up for a day of travels! I love that it packs in at least 2 cups of produce before noon. Here I’ve brought back some of my favorite components with a spiced-up twist. Sumac, parsley, and lemon juice don’t just hit your taste buds with a fresh, tangy flavor in the AM, but they all exert powerful antioxidant effects and may help protect against breast cancer.

Directions

  1. In a large bowl, combine cucumbers, tomatoes, parsley, Super Sumac, oil, lemon juice, and salt to taste and toss until everything is well combined.
  2. Serve with your choice of sides.
