1 eggplant, chopped

2 zucchini, chopped

2 cups broccoli florets

1 bell pepper, cored and chopped

1 1/2 tablespoons extra-virgin olive oil

Get ready to power-up your veggie game with this recipe for Roasted Veggies Your Way! It's a no-brainer dish that you can make on autopilot. Just grab your favorite veggies (eggplant, zucchini, broccoli, bell pepper, you name it!), toss them in one of our Power Spice Blends with some oil, and roast them on a baking sheet. It's the perfect way to level up the antioxidant value of your veg with delicious flavors.

Directions

  1. Preheat oven to 400°F. Line a sheet pan with parchment paper.
  2. In a mixing bowl, toss all vegetables with olive oil and spice blend. Lightly season with salt and pepper. Transfer to sheet pan.
  3. Bake 20-30 minutes, flipping at least twice, until veggies are golden brown.
