Savory Sizzle Chicken Stew

Ingredients

2 medium yellow onions, sliced 

8 to 10 Roma tomatoes, cut in fourths

4 medium garlic cloves, roughly chopped

1-inch fresh ginger root, peeled and roughly chopped (about 1 heaping tablespoon)

2 tablespoons olive oil

4 organic chicken breasts - boneless, skinless, and lightly seasoned with pepper and sea salt 

1 tablespoon Savory Sizzle Blend

1 teaspoon Vegitude Power Blend

2 large carrots, sliced into rounds

2 cups low sodium broth 

1 tablespoon red wine vinegar

5 Medjool or deglet dates, pitted and diced

Sweet and savory spices at their very best! This dish was inspired by my daughter Alexia, who begged for a shredded chicken dish that’s infused with flavor for her school lunches. The cumin and coriander boost each others’ antioxidant activities; garlic, ginger, and cayenne work together to decrease cholesterol levels. These flavors are perfectly balanced with cinnamon, tomatoes, and carrots, and guaranteed to satisfy even the pickiest of palates!

Directions

  1. Place 1 onion, tomatoes, ginger, and garlic cloves in a food processor or blender. Blend for 1 minute and set aside.
  2. In a medium-sized cooking pot, heat 1 tablespoon of oil over medium heat. Add the chicken breasts to the pot and brown for 2 minutes on each side (the chicken won’t be all the way cooked through).
  3. Remove chicken breasts and set aside. Add 1 tablespoon olive oil to the same pot and heat on medium-high heat.
  4. Add the second onion and saute for about 5 to 6 minutes until it’s slightly browned and softened.
  5. Add spice blend and saute for 1 minute.
  6. Add the tomato mixture, chicken, carrots, broth, and vinegar to the pot. Bring to a simmer and then cover with a lid.
  7. Continue cooking for 25 to 30 minutes until the chicken is cooked through and tender. Remove the chicken from the pot and place on a plate.
  8. Use a couple of forks to shred chicken in bite sized pieces. Stir in the chicken and dates and serve.
