Silver Dollar Pancakes

Ingredients

1 cup rolled oats

1 cup plant-based milk (i.e. soy, cashew, etc.)

1 ripe banana

1 whole organic egg or 2 egg whites or 1 Vegan Flax Egg (see Note)

1 teaspoon baking powder

1 teaspoon pure vanilla extract

1 tablespoon chia seeds

1.5 teaspoon Cinnapeel Spicer Blend

1 tablespoon avocado oil

1 to 2 teaspoons pure maple syrup (optional)

Note: Vegan Flax Egg: Mix 1 tablespoon ground flaxseed with 2 ½ tablespoons water. Let rest for 5 minutes to thicken before using.

These definitely aren’t your plain Jane pancakes! These get a boost of natural sweetness and flavor complexity from Ceylon cinnamon, ginger, and orange peel. Cinnamon and ginger may help balance your blood sugars, lowering your risk of diabetes. But it’s the concentrated source of antioxidants from the invigorating orange peel that sets these flapjacks apart! These taste great hot or chilled--I love making a big batch of these on the weekend and using the leftovers for an uplifting snack during the week (a favorite among my teen clients).

Directions

  1. Combine the rolled oats, milk, banana, egg or flax egg, baking powder, vanilla, chia seeds, spice blend in a blender.
  2. Melt the oil in a medium skillet over medium heat.
  3. Pour batter directly out of the blender onto the skillet into 2-inch rounds and cook until the underside is light golden brown, about 1 to 2 minutes.
  4. Flip and cook until the other side is golden brown, about 1 to 2 minutes more.
  5. Serve the pancakes topped with pure maple syrup, or dusted with additional spice blend, if desired. 

Nutritional Highlights

  • Ceylon cinnamon is “true” cinnamon — a lighter, sweeter version with 1,200 times less coumarin (a potential liver-toxic compound) than the standard grocery store cinnamon. Plus, it may regulate blood sugars and limit cancer cell growth.
  • Orange peel contains hesperidin and D-limonene, which may have antioxidant, anti-inflammatory, and anti-cancer effects. Bonus: it may also help suppress appetite and protect the liver from toxins. 
  • Ginger has 60+ phytonutrients, some of which may have anti-cancer effects (reduce cancer cell proliferation, alter gene expression, and decrease inflammation). Ginger may even help with weight loss by suppressing fat cell creation and help you feel full after meals. 
  • All three spices may help with blood sugar control and may have potential anti-cancer and anti-inflammatory effects.
