Tex Mex Tofu Scramble

Ingredients

2 teaspoons avocado oil

1 yellow onion, diced

1 bell pepper, diced

2 tablespoons chia seeds

16 ounces medium or soft tofu, drained

2 tablespoons nutritional yeast

2 teaspoons Tex Mex Power Spice Blend*

1/4 teaspoon salt

2 Roma tomatoes, diced

Your morning scramble just got a facelift! This scramble is creamy, protein-packed, and entirely plant-based thanks to the crumbled tofu; soft tofu is the key to a creamy and “egg-like” consistency. Nutritional yeast adds a savory and almost “cheesy” kick to complement all of the traditional Tex Mex flavors. It makes for great leftovers and probably will not last long; my daughter Keira ate this one up for breakfast AND dinner.

Directions

  1. Heat avocado oil in a skillet over medium heat.
  2. Add the onion and bell pepper to the skillet and sauté 5 minutes, until the onion is translucent. Add the tomatoes and stir in chia seeds.
  3. Meanwhile, in a mixing bowl, use a heavy fork to break up and crumble the tofu into the consistency of scrambled eggs. Fold in nutritional yeast, spice blend, and salt.
  4. Stir the tofu mixture into the skillet and sauté 3–5 minutes to heat the tofu throughout.
